Some time ago, when I was studying at Boston College, I realized that if I was going to be able to go to work, and then to college at night, I had to eat a good diet. I had been to cooking school, and I knew how to cook, but time was the problem now. In school we learned how to get the best taste from fresh foods. At home, translating that into a meal should have been easy. But like some of you, eating cereal for breakfast left one hungry not long afterwards.
What I learned from teaching cooking classes was that not many people understood the importance of eating a good breakfast. I made up a small questionnaire, and asked what they ate for breakfast that day, and if they drank coffee, tea, or juice, and if they took supplements. It was shocking to see that some had coffee and water, nothing else. How can your body function on poor nutrition? It can’t.
Breakfast is the most important meal of the day. Also if you want to have energy a meal and I mean by that every meal should be balanced and include carbohydrates, protein and fat. It can be 3/4 cup cottage cheese, low fat, ½ cup peaches and some peanuts. This gives you carbs, protein and fat. Shakes or Smoothees make a great breakfast if you do not overload them with carbs. Add yogurt, tofu or protein powder to make a balance shake.
